IMG_4772It’s so hard to believe that summer is coming to an end! It feels like it just started and here we are with my kids having just completed, very successfully I am happy to say, their first week back in school! I am officially the mom of high school and middle schooler. How this has happened, I do not know! But I sure do love the amazing teens I have raised. Sometimes it’s hard for me to absorb that these super cool, talented and incredibly smart little (well, bigger now than me!) people are really mine. Being a parent can be so hard….so so so hard, especially when you have a spirited little ball of curious energy as my son was when he was little, but I am so blessed beyond measure that, not only did I survive those days, but those days made my kids who they are today…

Yummy! I love Banana Split sundaes but this next recipe is for a pie….banana split pie. It’s actually quite easy to make and doesn’t take a ton of ingredients. You an also add whatever other goodies you’d like to it (sprinkles, strawberry sauce and more). Enjoy this delicious pie recipe.

Banana Split Pie

  • 1 package Vanilla Instant Pudding
  • 1 1/2 cup Milk
  • 16 oz Cool Whip
  • 2 sliced Bananas
  • 1 cup Pineapple Tidbits, drained
  • 1 cup diced Strawberries
  • 1 prepared Chocolate Pie Crust
  • Chocolate Syrup

  1. Place a layer of sliced bananas on pie crust. 332.jpg32 Banana Split Pie (No Bake!)
  2. Mix pudding mix and milk in a medium bowl. Stir until it begins to thicken.
  3. Whisk in 8 oz Cool Whip to incorporate and then add diced strawberries and pineapples. 421.jpg21 Banana Split Pie (No Bake!)
  4. Spoon mixture into crust and refrigerate for at least several hours.
  5. Top with remaining Cool Whip and drizzle with chocolate syrup and crushed nuts.

Rustic Apple and Blackberry Tarts

I had a couple of people pop over for tea this evening and I served a not-so-healthy-but-very-hearty meal of sausages, fried potatoes and baked beans. It was simple comfort food and it was nicely rounded off with a quick and tasty dessert.

Using this recipe, I had prepared individual fruit tarts. They consisted of shortcrust pastry filled with apples and blackberries and sprinkled with cinnamon sugar. They’re delicious on their own but when they’re served warm with a dollop of vanilla ice-cream, they’re absolutely irresistible. We’ll definitely be having these again this autumn.

There’s just something about cherries and summer, right? Like when you see them at the market, you just can’t not buy them. These local Ranier cherries were on “sale” at my little market, although even on sale they somehow ended up costing $14 ~ so I decided that meant I had to do something fun with them (or rather, with what remained after I ate a good portion of them immediately after purchasing).

I bought a cherry pitter last summer in the hopes of making a sour cherry pie – but alas, sour cherries are hard/impossible to find these days, so my pitter sadly went unused. Today I wanted to try out a pastry recipe my sister in law gave to me it has no butter and is very similar to the pastry which is used in Tarte flambé (Flammenkuchen) it comes from Alsace an area bordering Germany to the south it is delicious. But we will come to this at a later stage. I rolled the pastry and baked the tart in a pie plate but next time I would roll it out flat like pizza I think it would work well. I was amazed how easy the pastry was to handle.
