Zucchini Tart

A must in every kitchen in the French countryside, this Provencal zucchini tart recipe is nutritious and easy to prepare. Classic herbes de Provence enliven sautéed zucchini to make a fresh flavor combination with sharp, salty Parmesan cheese. The result is a delicious courgette quiche.

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 5 minutes

Yield: 6 servings courgette tart


  • 1 layer pate brisee1
  • 2 medium zucchinis, thinly sliced
  • 2 tablespoons butter
  • 3/4 teaspoon herbes de Provence
  • 1/4 teaspoon ground black pepper
  • 4 eggs
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese


How to make zucchini tart:

In a large pan set over medium-high heat, sauté the zucchini slices in the butter for 3 minutes. Add the herbs and pepper and continue sautéing the mixture for an additional 2 minutes.

Preheat the oven to 375 degrees. Fit the pastry into a deep-dish pie pan. Spread the seasoned zucchini into the pastry. Beat together the eggs, cream, and cheese. Pour the eggs over the zucchini and bake the quiche for 45-50 minutes, until the eggs are set in the middle. Cool slightly and serve.
